Begun Pora – Classic Bengali Chargrilled Eggplant (বেগুন পোড়া)

One can easily sense the emerging gap between modern, urban adaptations and the soulful purity of classic Bengali home cooking. Take begun pora makha (slow-charred mashed aubergine): while oven-baking with refined vegetable oils produces a pleasing appearance, the authentic smoky depth remains compromised without raw, pungent mustard oil.

True Bengali begun pora needs nothing more than embers, cold-pressed mustard oil, fresh coriander leaves, sea salt, and fiery green chilies—perhaps accented with a charred red chili or a hint of julienned ginger.

Aloo Begun Pora Recipe (Grilled Potato & Smoked Aubergine Mash)

Ingredients

  • Large Eggplant (Begun): 1 whole (approx. 500 g, stem intact)
  • New Potatoes: 2 to 3 medium
  • Asafoetida (Hing): 1 generous pinch
  • Mustard Oil: 1 tbsp (raw, pungent cold-pressed)
  • Ghee: 1 tbsp (for basting potatoes)
  • Onion: 1 medium, finely sliced
  • Fresh Ginger: 1 tsp, cut into fine juliennes
  • Green Chilies: 2, finely chopped
  • Fresh Coriander Leaves: 1 tbsp, chopped
  • Salt: To taste

Method

  1. Wash and thoroughly dry the eggplant. Rub a thin film of mustard oil over the skin. Using the tip of a paring knife loaded with a speck of asafoetida, make small, shallow slits around the eggplant.
  2. Roast the eggplant directly over an open flame or charcoal grill, turning periodically until the skin is blistered and charred black and the inner flesh collapses softly.
  3. Wash the new potatoes thoroughly. Skewer each potato on a metal grilling rod and roast slowly over low heat, basting with a little ghee until fork-tender and smoky. Cool slightly.
  4. Peel off the blackened charred skin from the eggplant and discard the stem. Peel the roasted potatoes.
  5. In a wide bowl, mash the smoky eggplant flesh and roasted potatoes together. Fold in the sliced onions, julienned ginger, chopped green chilies, coriander leaves, salt, and raw mustard oil. Mix gently with your fingers to preserve texture.
  6. Serve warm with handmade rotis or steaming hot parboiled rice.
